Food Friday

I thought I'd share a delicious, easy and healthy recipe with you today for Food Friday. I very recently found this myself and was quite impressed with it!

Spinach Pasta

You will need:

400-500 g pasta
1 tbls coconut oil
1 onion, chopped
the meat of your choice, I used mince meat
200 ml hot vegetable stock
300 g frozen peas
250 g spinach
fresh basil

1. Start cooking the pasta. Heat the oil in a frying pan, add the chopped onion and cook until it starts to soften. Add your meat and cook it until it is ripe. Pour in the hot stock and boil.

2. Stir in the peas and wait until they have defrosted. Add the spinach and basil.

3. Drain the pasta and mix it with the sauce. Serve while still warm! Enjoy!

P.S. You could add some cheese to it too, but I just thought I'd do it the healthy way (for once hehe...).
