Vanilla Cupcakes with White Choc surprise


-Excuse me while I go wipe my mouth after that mouth-watering thought of cupcakes-

Hey everybody! I hope you all had a lovely weekend and a fun Valentine's Day! I spent mine with the in-laws and decided to bake some yummylicious cupcakes for us all to share. I hadn't tried this recipe before and they turned out so well and scrumtious, that I thought I'd share it with you lovelies!


I'm aware the decorations are very valentiny, but you could always change them to more appropriate ones. So if you have a good ol' sweet tooth and like to bake, try this:

INGREDIENTS

Cupcakes
150g softened butter
150g caster sugar
0,5 tsp vanilla extract
3 large eggs
150g flour
1 tsp baking powder
1 white chocolate bar

Buttercream
100g softened butter
200g icing sugar
1tsp vanilla extract

12 cupcake cases

1. Mix butter, sugar and vanilla together until the mixture becomes light and fluffy.
2. Beat the eggs in a jar and slowly add them to the butter-mixture.
3. Mix the flour and baking powder together and slowly add it to the mixture. Keep mixing all the time. 
4. Heat the oven to 180 degrees C or Gas mark 4. Line a muffin tin with cupcake cases. 
5. Spoon the mixture into the cupcake cases. Add a piece of white chocolate into each cupcake, making sure the piece doesn't either touch the bottom of the case nor show at the top of the cupcake. Bake them in the oven for about 18-20 minutes, until a skewer inserted into the centre of one of the cupcakes comes out clean.
6. Let the cupcakes cool down
7. While doing so, prepare the buttercream. Mix the softened butter, icing sugar and vanilla extract slowly together, until the mixture is once again light and fluffy. 
8. Spoon a bit of buttercream onto each cupcake and smooth over using a spatula.
9. Decorate!

And that's it! Eat, share and enjoy! Yummuyumyum!

  11. Oh my gosh these are so cute!! I LOVE the detail on each little pink heart :) I have been wanting to bake more and these are kind of the perfect excuse to bake!   12. I like baking and I always find an excuse to bake, so for you to bake these yummylicious cupcakes Valentine's Day was a great excuse :) I'm sure your hubby really enjoyed eating these delicious cupcakes! I love the pink decoration, it just looks so cute:)
